Ratatouille
  • 3 Tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic, minced 
  • 1 medium eggplant, diced in chunks
  • 2 medium zucchini, sliced into 1cm slices
  • 1 medium red pepper, diced 
  • 1 medium green pepper, diced
  • 1 can tomatoes 
  • 1/4 cup chopped fresh basil 
  • 1/2 tsp dried oregano
  • 3/4 tsp each sea salt and black pepper 

Heat olive oil in a large pot or fry pan over a medium heat.

Add onion, garlic and eggplant. Saute until eggplant is starting to soften.

Add courgette and peppers. Cook for 5 minutes.

Add can of tomatoes, basil and seasoning. Allow to simmer for 20 minutes or until vegetables are tender. 

 

Taste and adjust seasonings before serving.
